Raw Chocolate Avocado Pudding

I’m always on the lookout trying to find ways to
incorporate nutritious foods and veggies into some of my daughter’s favorite
treats because as she is growing older, she has also become a lot
pickier too. I came across this recipe for Chocolate
Avocado Pudding, which at first I didn’t think it could outsmart two
year old spidey senses, however you would’ve thought I gave her Jello
pudding by the way she was devouring it.
Avocados have an abundance of nutrients, heart healthy fats, fiber, and contains no cholesterol. This, along with the cocoa, also makes for an antioxidant rich treat. It is also dairy-free.
This recipe is super easy and quick. You should be able to make it in 5 minutes tops and requires no cooking!
Ingredients:
-2 Hass avocados (they are creamier in consistency, which is perfect for the pudding)
-1 cup cocoa powder
-3/4 cup raw honey
-1 tsp vanilla extract
-1 cup almond milk
-pinch of salt
Mix all ingredients in a food processor or blender and blend until smooth. Chill then serve. Top with your favorite toppings (walnuts, cacao nibs, sprinkles, sunflower seeds).

It turned out to be a hit with everyone, even the
King of picky, my husband, Pete. The best part is that Norah thinks this
is the same pudding she gets at her grandma’s house, but this tastes
just as good or even better. Hopefully it becomes a staple snack, as its one of ours!
