Sweet Potato Toast

For a couple weeks, I've had three sweet potatoes just sitting in my cabinet, getting no love. I've been waiting for the right time to use them, but after a while, I just forgot that I even had them. A couple days ago, I ran across a recipe for sweet potato toast. If you know me I'm a lover of anything sweet potato and a quick meal, so to read that it required only a toaster and ingredients to top it with sold me. Not to mention, our little Norah is having crazy constipation, so I'm trying to find more ways to incorporate fiber and nutrients into her diet and thought this would be a cool recipe to try.





Sweet potatoes are full of vitamins and are naturally sweet-tasting, but doesn't cause sugar spikes. A few of its benefits are they boost your immune system, protect against signs of aging, strengthen your bones, regulate heart beat and may help ward off cancer.




Ingredients:

-1 large sweet potato
-your favorite toppings


Directions:

1. Cut sweet potato into vertical 1/4 inch thick slices. If you make them too thick, they will take longer to cook through.

2. Turn your toaster on high and toast the slices for 3 rounds or at least 5 minutes.

3. Top sweet potato slices with your favorite toppings.

4. Enjoy!




The toppings we used in these photos are:

-Avocados, egg, and chia seeds

-Almond butter, pistachios, dried cranberries, and banana

-Avocados, tomatoes, mushrooms, salt and pepper

-Dairy-free vanilla yogurt, blueberries, chia seeds, and banana




If you have a picky eater, try making the food look fun. I made my toast look like fish and placed it in the middle of the table. This made her ask questions on what she was eating and as we kept referring to it as "fishies" she would pick and choose her toppings and eventually got around to eating the potato. I find that if I provide a variety of choices, she is more willing to want to eat it. I can say, she was not a fan of the skin on the potato, so next time I would probably peel the skin before I give it to her.

Raw Chocolate Avocado Pudding

I’m always on the lookout trying to find ways to incorporate nutritious foods and veggies into some of my daughter’s favorite treats because as she is growing older, she has also become a lot pickier too. I came across this recipe for Chocolate Avocado Pudding, which at first I didn’t think it could outsmart two year old spidey senses, however you would’ve thought I gave her Jello pudding by the way she was devouring it.




 Avocados have an abundance of nutrients, heart healthy fats, fiber, and contains no cholesterol. This, along with the cocoa, also makes for an antioxidant rich treat. It is also dairy-free.




This recipe is super easy and quick. You should be able to make it in 5 minutes tops and requires no cooking!

Ingredients:

-2 Hass avocados (they are creamier in consistency, which is perfect for the pudding)
-1 cup cocoa powder
-3/4 cup raw honey
-1 tsp vanilla extract
-1 cup almond milk
-pinch of salt

Mix all ingredients in a food processor or blender and blend until smooth. Chill then serve. Top with your favorite toppings (walnuts, cacao nibs, sprinkles, sunflower seeds).






It turned out to be a hit with everyone, even the King of picky, my husband, Pete. The best part is that Norah thinks this is the same pudding she gets at her grandma’s house, but this tastes just as good or even better. Hopefully it becomes a staple snack, as its one of ours!
